Chef Fati Niang aims to revive niébé, also known as black-eyed pea or cowpea, in Senegalese street food. This native West African crop is resilient to drought, nutritionally rich, and a tradition in Senegalese gastronomy. Historically labeled as 'food for the poor' by colonialists, niébé has been marginalized. Niang's project, Black Spoon, seeks to elevate street food using indigenous crops like cowpea. Street food plays a vital role in Senegalese culture, primarily driven by women, yet lacks native ingredients. Niang's mission is to reintroduce these flavors through her innovative culinary venture.
